Serving size: 1/2 pizza
Ingredients
Sauce
- 1 tbsp olive oil
- 1 tsp dried basil
- 2 tsp dried oregano
- 2 tsp balsamic vinegar
- 1-2 cloves fresh garlic, finely chopped
Topping (for one pizza)
- 2oz (roughly 1/3 cup) cooked chicken breast. Leftovers are perfect!
- 1/2 small onion, sliced lengthwise
- 1/4 red pepper, thin sliced lengthwise
- 1 tsp olive oil
- Ground pepper to taste
- Fresh basil or fresh oregano on top as garnish (optional)
- Balsamic vinegar glaze (optional, but worth it – see notes below)
Directions
- Thaw dough per package instructions.
- Preheat oven to 450°F (230°C).
- Divide dough into 4 balls and roll out on a lightly floured surface. Each ball makes one thin crust. Place rolled dough on pizza pan. Set aside.
- For the sauce, in a small bowl combine: olive oil, basil, oregano, garlic and balsamic vinegar. Brush olive oil and herb mixture onto rolled out pizza dough covering entire surface.
- Thinly slice onion and red pepper. Cut chicken into bite sized pieces.
- Sauté onions in small amount of olive oil, until translucent and slightly browned, approximately 5-6 minutes. Add red peppers and chicken, cook for 1-2 minutes.
- Spread mixture evenly onto pizza and add ground pepper to taste.
- Optional: drizzle with balsamic glaze (store bought or homemade, see notes below).
- Place in oven and bake for approximately 15 minutes.
Optional Tips and Ideas
- If you do not have balsamic vinegar in your pantry this recipe will still work without it, just skip the ingredient.
- If you are using homemade pizza crust or other pizza dough option, do not forget to look at the salt content on the nutrition labels and choose the lowest option per serving size.
