Ingredients
Filling
- 1 lb ground beef
- 2 cups canned brown lentils
- ½ cup yellow onion, chopped
- 1 tbsp chili powder
- 1 ½ tsp ground cumin
- 1 tsp ground black pepper
- ½ tsp ground paprika
- ¼ tsp garlic powder
- ¼ teaspoon onion powder
- ¼ tsp dried oregano
- ¼ cup water
Mango Salsa Topping
- 1 cup Mango, chopped
- ¼ cup Red Onion
- 1 lime, juiced
- 1 tbsp Minced Garlic
Other
- Medium Whole Wheat Tortillas (1 per serving)
Directions
- Heat a large skillet over medium heat. Add the ground beef. Break up the beef with a wooden spoon. While beef is cooking, chop yellow onion. Add in onion to the beef mixture, stir. Cook the ground beef fully until browned and no longer pink.
- Once beef is cooked, turn heat down to low and add in lentils, stir until well mixed.
- In a small bowl mix together chili powder, cumin, black pepper, paprika, garlic powder, onion powder, and oregano.
- Add water and spice mixture to the skillet, stir until well combined. Turn off heat and set aside to make the mango topping.
- Chop mango into ½ inch cubes, slice red onion into thin strips, place in medium bowl.
- Add in the juice from 1 lime.
- Add 1 tbsp minced garlic, stir well to combine.
- Add ½ cup of beef and lentil mixture to a medium whole wheat tortilla. Top with mango salsa and enjoy!
Tips:
- Look for tortillas without phosphorus additives by reading the ingredient label on the package
- If using dried lentils, soak overnight and drain water, then prepare as per package directions
- If you don’t like mango, substitute 1 cup cooked con instead
