Ingredients

For Sauce

  • 1 cup low Sodium Chicken Broth
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 tbsp soya sauce
  • 1 tbsp corn starch
  • ¼ tsp red pepper flakes (optional for spice)

For Stir Fry

  • 1 tbsp sesame oil
  • 12 oz chicken breast (approximately 2 chicken breasts)
  • 2 cups vegetables (low potassium if you have a potassium restriction)
  • 1 cup unprepared rice (two cups when cooked)

Directions

  1. Prepare rice according to package instructions
  2. In a bowl, mix together ingredients for sauce, set aside
  3. Chop vegetables, set aside
  4. Cut chicken into small pieces
  5. Heat sesame oil in pan on medium heat, add chicken, once chicken is cooked all the way through, add vegetables, cook until vegetables are tender
  6. Turn heat up to high, add sauce mixture, and stir continuously until sauce has thickened
  7. Serve over ½ cup of rice
