Servings: Makes 24 meatballs
Ingredients
- 1lb lean ground beef
- 1 cup no-salt-added canned white beans
- 1 egg
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp ground black pepper
Directions
- Drain and rinse the white beans and place in a food processor or blender. If you do not have a blender, they can be mashed with a fork.
- Add all ingredients to a mixing bowl and combine well.
- Form into 1-inch balls and place on a baking sheet.
- Bake at 350° F for 20 minutes.
Other Tips and Ideas:
- You can refrigerate the leftover beans to use in a soup, stew or mashed onto toast or a quesadilla
- Leftover beans can also be frozen to use at a later date
- Meatballs can be frozen and reheated for easy meal prep
- Complete the meal with some spaghetti and up to 2 tbsp marinara sauce (marinara sauce is high in potassium, but when used in small amounts, can fit into a kidney friendly diet)
- The sauce can be thinned with some olive oil to make it go further
