Servings: Makes 24 meatballs

Ingredients

  • 1lb lean ground beef
  • 1 cup no-salt-added canned white beans
  • 1 egg
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper

Directions

  1. Drain and rinse the white beans and place in a food processor or blender. If you do not have a blender, they can be mashed with a fork.
  2. Add all ingredients to a mixing bowl and combine well.
  3. Form into 1-inch balls and place on a baking sheet.
  4. Bake at 350° F for 20 minutes.

Other Tips and Ideas:

  • You can refrigerate the leftover beans to use in a soup, stew or mashed onto toast or a quesadilla
  • Leftover beans can also be frozen to use at a later date
  • Meatballs can be frozen and reheated for easy meal prep
  • Complete the meal with some spaghetti and up to 2 tbsp marinara sauce (marinara sauce is high in potassium, but when used in small amounts, can fit into a kidney friendly diet)
  • The sauce can be thinned with some olive oil to make it go further
