Salmon Patties

Ingredients

Servings: 4

  • 2 cans (142 g each) of skinless, boneless sockeye salmon, drained and rinsed
  • 1 large egg, slightly beaten
  • ½ cup finely diced white onion
  • ½ cup finely diced red bell pepper
  • ½ cup breadcrumbs
  • 1 tbsp lemon juice
  • 1 tsp grated lemon peel
  • ½ tsp dry rosemary, crushed
  • Pinch of ground pepper
  • 1 – 2 tbsp vegetable oil

Directions

1. Combine salmon, egg, onion, bell pepper, breadcrumbs, lemon juice, lemon peel, rosemary, and black pepper.

2. Form the mixture into 4 patties. Chill in the refrigerator for at least 30 minutes to set.

3. Heat the oil in a large, nonstick pan over medium heat.

4. Carefully transfer the patties to the pan and cook for about 3 to 5 minutes per side, or until lightly browned.

5. Enjoy the patties alone or with a side of your choice, on a bun, or wrapped in lettuce.
