Serving Size: 1 cup

Ingredients

  • 4 large potatoes (~5 cups), peeled & diced
  • 1 ½ cups all-purpose flour, plus more for dusting
  • ¼ tsp salt
  • 1 egg, large
  • 4 tablespoons unsalted butter
  • ¼ cup parmesan cheese, finely grated
  • 24 sage leaves
  • Black Pepper to taste

Directions

  1. Double boil potatoes. Fill pot with water and set to boil. Once boiling, add potatoes and boil for 10 minutes. Drain potatoes, add new water and boil again for 10 minutes. Allow potatoes to cool.
  2. Place potatoes in a bowl and mash with fork. Add flour, salt and egg; mix well. Gently knead until dough is formed.
  3. Dust your working surface with flour. Divide dough into 8 pieces and roll out until about ½ inch thick. Cut into ½ inch pieces, may require additional flour dusting.
  4. Add gnocchi to a large pot of boiling water, cook about 2 minutes or until floating.
  5. Melt butter in a frying pan. Add parmesan, sage, cooked gnocchi and ¼ cup of the gnocchi cooking water. Mix well and enjoy!
