Thinly sliced limes.

Servings: 2

Ingredients:

  • 1 teaspoon Paprika
  • ½ teaspoon oregano
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin
  • ¼ teaspoon ground black pepper
  • Sprinkle of cayenne pepper
  • 1 tablespoon olive oil (divided)
  • ½ tablespoon unsalted butter
  • Zest and juice of 1 lime
  • 2 Cod Fillets

Directions

  1. Combine all spices and mix well. Using ½ tablespoon olive oil, brush the cod with oil and then rub with the spice mixture. Refrigerate the cod for at least 30 minutes up to 12 hours.
  2. Preheat oven to 450° F. Place cod on foil-lined baking sheet and roast in oven for 10-12 minutes. The fish will flake easily when it’s cooked through.
  3. While the cod bakes, melt butter in a small saucepan. Combine melted butter with ½ tablespoon olive oil and juice and zest from lime. Lightly brush lime mixture overtop of the baked cod.
