Makes 8 servings (1/2 cup per serving)

Ingredients

1 large head (7-8 inch) Cauliflower, cut up 2 Tbsp Butter or margarine, melted

Directions

  1. Boil cauliflower until it is soft (10-15 minutes).
  2. Drain cauliflower and put through food processor (or use a potato masher).
  3. Add melted butter and use as a substitute for mashed potatoes
