Preheat oven to 400 F and lightly grease muffin tins.
Mix together in small bowl:
¼ cup oil 1 egg
1 tsp vanilla
1/3 cup honey
1 cup applesauce or crushed pineapple drained
Optional: ½ cup fresh or frozen blueberries or raspberries
In another bowl mix:
1 cup white flour
1 cup wheat bran
1 ½ tsp baking soda
¼ tsp cream of tartar
Pour liquid ingredients into dry mixture. Mix together. Do not over mix. Spoon into muffin tins. Bake for 15‐20 minutes.
Cream of tartar and baking soda will only rise once so do not delay getting the muffins into the oven.
