This is a perfect summer dish – light but packed with flavour.
Makes 6 servings
Preheat oven to 350°F
Combine all ingredients for the mango salsa in a bowl and refrigerate until ready to serve.
Coat shrimp in lemon juice and sprinkle with black pepper in baking dish
Bake shrimp in oven for 9-13 minutes, until shrimp look pink and opaque
Place cooked shrimp in taco shell and cover with mango salsa
