Serve up a refreshing salad with fresh summer strawberries.

Serves 4 (1 portion=1 ¼ cup)

Ingredients:

  • 4 cups mixed greens           
  • 1 cup thinly sliced strawberries
  • 1/4 cup chopped raw pecans (optional)
  • 1/3 cup (50g) crumbled feta cheese (optional)
  • 1 Tbsp vinegar
  • 1 Tbsp lemon juice
  • 2 Tbsp honey
  • 1/8 tsp dry mustard powder
  • 3 Tbsp olive oil

Directions:

  • Wash and dry mixed greens.
  • Thinly slice strawberries.
  • Top greens with sliced strawberries.
  • Mix together the vinegar, lemon juice, honey, dry mustard powder and oil.
  • Pour dressing over greens and strawberries. Toss well.
  • Top with pecans and feta; serve immediately.
  • Optional: top with your favourite source of protein (grilled chicken, steak strips, tofu, chickpeas, etc).
