A simple sandwich – easy to make for lunch at home or on the go.

Ingredients:

  • 1/3 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp Dijon or yellow mustard
  • ¼ tsp fresh ground black pepper (add more or less to taste)
  • 1 ½ cups of chopped cooked turkey meat (about 8 oz; can substitute with chicken)
  • 1 cup diced red and yellow bell peppers
  • 1 cup diced cucumber
  • 1 cup shredded cabbage
  • 4 white tortillas (can substitute with white pitas)

Directions:

1. In a large bowl, whisk together yogurt, mayonnaise, mustard and pepper. Stir in turkey, bell peppers and shredded cabbage until well coated.

2. Place even amounts of cucumber in the center of each tortilla. Spoon even amounts of turkey mixture on each tortilla and fold your wrap into shape.

Makes 4 servings

1 serving =   2 ounces turkey (2 protein choices)
