A flavourful patty packed with protein. This recipes makes four servings.

Ingredients

  • 2 green onions, chopped
  • 3 cloves garlic, chopped
  • 1 can (540 ml) chickpeas, drained and rinsed
  • 2 tsp. cumin
  • 1 tsp. chili powder                                                                        
  • 1/8 tsp. black pepper                                                       
  • ½ tsp. onion powder
  • 1 egg
  • 1/2 cup white flour

Directions

1. In a food processor, mix green onions and garlic until chopped.  Add chickpeas, egg, spices and mix into a paste.

2. Add flour and mix until combined.

3. Shape dough into four balls and flatten each into a patty.

4. In a large frying pan, heat 3 tsp. vegetable oil over medium heat.

5. Turn heat to medium low and fry patties until golden; about 4 minutes on each side.

6. Serve with cucumber salsa.

7. Serve with cucumber salsa.

Cucumber Salsa

  • 2 English cucumbers, peeled and diced
  • 2 tsp. dill weed, dried
  • 2 tsp. red wine vinegar
  • 1 tbsp. olive oil -Combine all ingredients in a small bowl.  Serve with chickpea patties.

Yield= 4 servings
