Ingredients:
- 1 teaspoon Paprika
- ½ teaspoon oregano
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ¼ teaspoon cumin
- ¼ teaspoon ground black pepper
- Sprinkle of cayenne pepper
- 1 tablespoon olive oil (divided)
- ½ tablespoon unsalted butter
- Zest and juice of 1 lime
- 2 Cod Fillets
Directions
- Combine all spices and mix well. Using ½ tablespoon olive oil, brush the cod with oil and then rub with the spice mixture. Refrigerate the cod for at least 30 minutes up to 12 hours.
- Preheat oven to 450° F. Place cod on foil-lined baking sheet and roast in oven for 10-12 minutes. The fish will flake easily when it’s cooked through.
- While the cod bakes, melt butter in a small saucepan. Combine melted butter with ½ tablespoon olive oil and juice and zest from lime. Lightly brush lime mixture overtop of the baked cod.
