Ingredients
For Sauce
- 1 cup low Sodium Chicken Broth
- 1 tsp minced ginger
- 1 tsp minced garlic
- 1 tbsp soya sauce
- 1 tbsp corn starch
- ¼ tsp red pepper flakes (optional for spice)
For Stir Fry
- 1 tbsp sesame oil
- 12 oz chicken breast (approximately 2 chicken breasts)
- 2 cups vegetables (low potassium if you have a potassium restriction)
- 1 cup unprepared rice (two cups when cooked)
Directions
- Prepare rice according to package instructions
- In a bowl, mix together ingredients for sauce, set aside
- Chop vegetables, set aside
- Cut chicken into small pieces
- Heat sesame oil in pan on medium heat, add chicken, once chicken is cooked all the way through, add vegetables, cook until vegetables are tender
- Turn heat up to high, add sauce mixture, and stir continuously until sauce has thickened
- Serve over ½ cup of rice
