Onion rings on a plate with dipping sauce.

Servings: 2

Ingredients:

  • 1 medium onion
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp cayenne powder
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ½ cup milk
  • 1 egg
  • 1 cup panko breadcrumbs

Directions

  1. Preheat oven to 450oF
  2. Cut onions into ¼ inch thick rings
  3. Stir together flour, baking powder, spices
  4. Whisk milk and egg to the flour mixture
  5. In separate bowl add panko crumbs
  6. Drop your onion rings into the batter, coating evenly
  7. Move coated rings into the bowl of panko crumbs, coating evenly
  8. Arrange rings on baking sheets lined with parchment paper
  9. Bake onion rings for 7 minutes, flip them over and bake for another 7 minutes
  10. Serve with your favorite dipping sauce

* For a phosphorous-free baking powder, sift together 4 tbsp of cream of tartar and 2 tbsp baking soda. Store in an air tight container at room temperature. Use as 1:1 ratio of regular baking soda.
