Ingredients:
- 1 tbsp cooking oil
- 1 ½ pounds skinless, boneless chicken breast meat– cubed
- ⅛ cup red wine vinegar
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon white sugar
- ¼ teaspoon salt
- ½ teaspoon ground black pepper
- ½ bunch fresh cilantro- chopped
Directions
- Sauté chicken in a medium saucepan over medium high heat until tender, about 15 to 20 minutes. Add vinegar, lime juice, garlic, oregano, sugar, salt, and pepper. Simmer over low heat for 10 minutes, or until chicken is fully cooked and liquid evaporates.
- Top with freshly chopped cilantro, and serve in warm 6 inch tortillas, over rice, or riced cauliflower. Can also add black beans and reduce chicken to increase plant-based protein and decrease animal protein. Garnish with chopped cilantro and lime wedges.
