Ingredients:
2 Tbsp olive oil
1 red bell pepper, diced
I carrot, fine diced or shredded
1 cup chopped broccoli
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp pepper
8 eggs
½ cup cottage cheese
½ cup shredded mozzarella
Directions
- Preheat oven to 350° F. Line 9×5 loaf pan with parchment paper, or grease pan with oil.
- In a large fry pan heat oil on medium heat. Add in carrots, bell pepper and broccoli. Cook until softened – about 10 minutes, stirring occasionally. Next add in the seasonings and mix together. Transfer the vegetable mixture to your loaf pan and spread out evenly.
- In a bowl, whisk together the eggs and cottage cheese. Fold in the shredded cheese. Pour mixture evenly over the cooked vegetable in you loaf pan. Bake for 50-55 minutes or until the top of the loaf is golden. Remove from oven and allow to rest in the pan for 10 minutes then transfer to a plate to cool before slicing.
Note: you can substitute in any vegetables or shredded cheese that you like here.
