Ingredients:
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- 1 cup room temperature unsalted butter
- 1¼ cups granulated sugar
- 4 large eggs
- 3 tablespoons fresh lemon juice
- ½ cup 2% milk
Directions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan with baking spray and line with parchment paper.
- In a bowl, add flour and baking powder then whisk together.
- In a large bowl, whisk room temperature butter until it becomes lighter in color and fluffier in texture. Slowly whisk in sugar. Add in lemon juice and mix. Proceed to add one egg at a time to the mixture, until all combined. Scrape down the sides of the bowl if needed.
- Fold in flour and baking powder to the wet ingredients while adding the milk in slowly. Once all are combined, add to the loaf pan.
- Bake in the preheated oven for around 70 to 75 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Let the cake cool completely before serving.
